Peaches and Cream Chia Pudding

This Peaches and Cream Chia Pudding with Coconut Milk is a delicious snack packed full of nutrients and fibre! It’s the perfect for breaky on-the-go, snack or even as a healthy summer desert that’ll be sure to impress your guests! Oh and it takes less than a couple of minutes to put together.

Chia seeds are one of my favourite superfoods from a nutritional perspective, packed with calcium (more than milk!), antioxidants and of course rich in omega-3 fatty acids. Chia seeds are also packed with protein and dietary fibre that supports the gut, appetite control, regular healthy bowel movements, and blood sugar levels.

Ingredients:

 1 cup coconut milk

 1 cup canned peaches, if you don’t like peaches you could sub with mango

 1 tbsp shredded coconut

4 tbsp chia seeds

 ½ tsp vanilla extract

1/4 tsp of turmeric (if you want a brighter colour and more nutrients! - just add a little and check the taste as it can get strong fast)

 1 tsp pure maple syrup or honey

Directions:

  1. In a blender place all the ingredients apart from the chia seeds and blend on high until smooth

  2. Transfer to a container and stir through the chia seeds

  3. Place in the fridge to set for at least 2 hours (ideally overnight)

  4. Top with your favourite ingredients - this goes really well with vanilla yogurt and some fresh fruit!
