Wholefood Choc Oat Cookies

 

You’re going to fall in love with these wholesome oat cookies!


Made with hearty oats and soft oat flour, they’re wonderfully gooey and naturally sweetened with coconut sugar for a rich, caramel-like flavour. They take just 5 minutes to prepare, 11 minutes in the oven, and are a guaranteed hit with toddlers (and grown-ups alike). Perfect for when you want a sweet treat in no time.

Servings: 14 cookies

Ingredients:

  • 125g melted butter

  • 100g coconut sugar

  • 1 egg

  • 1 tbsp vanilla extract

  • 125g flour of choice – oat flour is great or buckwheat or regular flour works also

  • 125g oats

  • 1 tsp baking soda

  • 70g dark chocolate

Coconut sugar and oats are sourced from Ceres Organics.

Method:

  1. Line two large baking trays with baking paper and preheat your oven to 175°C fan bake.

  2. Add melted butter, coconut sugar, egg and vanilla extract to a bowl and whisk until combined.

  3. Add the oats, oat flour and baking soda and stir to combine.

  4. Stir in your dark chocolate if using.

  5. Roll into tablespoon size balls and place each ball onto your tray. Avoid placing too close together as the mixture will flatten and spread as it bakes.

  6. Place in the oven and bake for 10-11 minutes or until golden brown.

  7. Once baked, remove from the oven and allow cookies to cool for 5 minutes, they should come out of the oven soft and will harden over those 5 minutes.
