Savoury Chicken Protein Bars

Easy, crispy & ~13g protein each

Sometimes you want an easy protein snack without reaching for something sweet. These Savoury Chicken Protein Bars are essentially a chicken nuggy in bar form — crispy on top, juicy in the middle and made with just a handful of ingredients.

I love prepping a batch to keep in the fridge for busy mornings, an easy savoury snack or a protein addition to lunchboxes.

Ingredients

Chicken base

  • 400g chicken mince

  • 1 egg

  • 2 tbsp panko breadcrumbs

Crispy topping

  • Plain flour, for lightly dusting

  • 1 egg, beaten

  • 2 tbsp panko breadcrumbs

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½–1 tsp peri-peri chicken seasoning, depending on taste

  • Pinch of salt

Method

  1. Preheat your oven to 190°C fan bake and line a baking tray with baking paper.

  2. Combine the chicken mince, egg and 2 tbsp panko breadcrumbs in a bowl.

  3. Lightly dust the baking paper with flour. Add the chicken mixture and press it into an even rectangle approximately 1.5–2cm thick.

  4. Lightly dust the top with flour.

  5. Combine the smoked paprika, garlic powder, onion powder, peri-peri seasoning and salt, then sprinkle evenly over the chicken.

  6. Brush the beaten egg over the top, then sprinkle over the remaining panko. Gently press the crumbs into the surface.

  7. Bake for approximately 18–22 minutes, or until golden and completely cooked through. The centre should reach 75°C.

  8. Allow to rest for 5–10 minutes before cutting into 8 bars.
