Cottage Cheese Veggie Frittata
A super simple, prepable breakfast that is high in protein and will keep you fuller for longer.

Ingredients:
8 large eggs
1/2 brown onion diced
250g lite cottage cheese
1/4 cup feta cheese
1 cup baby spinach
Add extra veggies if you wish such as mushrooms + tomatoes
Season with salt and freshly ground black pepper
Method:
Preheat oven to 175 degrees. Move oven rack to the second highest from the top.
Lightly spray a 10-inch oven safe dish with cooking spray.
In a medium bowl, whisk eggs and cottage cheese
Add remaining ingredients and mix
Add into pan, and cook in the oven until the top is golden.
