Cottage Cheese Veggie Frittata

 

A super simple, prepable breakfast that is high in protein and will keep you fuller for longer.

Preparation: 10 mins
Servings: 4

Ingredients:

  • 8 large eggs

  • 1/2 brown onion diced

  • 250g lite cottage cheese

  • 1/4 cup feta cheese

  • 1 cup baby spinach

  • Add extra veggies if you wish such as mushrooms + tomatoes

  • Season with salt and freshly ground black pepper

Method:

  1. Preheat oven to 175 degrees. Move oven rack to the second highest from the top.

  2. Lightly spray a 10-inch oven safe dish with cooking spray.

  3. In a medium bowl, whisk eggs and cottage cheese

  4. Add remaining ingredients and mix

  5. Add into pan, and cook in the oven until the top is golden.
