Lactation Cookies

 

Know someone having a baby soon? Make them these cookies as little treat when they are up in the night with baby!

Preparation: 5 mins
Cook time: 11-13 minutes
Servings: 12 cookies

Ingredients:

  • 12 tsps nutella or 12 pieces of dark chocolate

  • 125g unsalted butter

  • 150g light brown sugar or coconut sugar

  • 1 tsp vanilla

  • 1 medium egg

  • 150g flour of choice

  • 100g @ceresorganics oats (blended into a fine powder)

  • 1 tbsp @ceresorganics yeast flakes

  • 1/2 tsp bicarbonate of soda

  • 1/2 tsp salt

Method:

  1. If using nutella, scoop your teaspoons of nutella onto a lined tray, and freeze until solid. This usually takes 30-60 minutes.

  2. Line two large baking trays with baking paper and preheat your oven to 175°C fan bake.

  3. Beat together the melted butter and coconut sugar or brown sugar until light and fluffy.

  4. Add in the egg and vanilla extract and beat again until smooth.

  5. In a seperate bowl, combine the flour, oats, salt, bicarbonate of soda and nutritional yeast, and then mix in the wet mix.

  6. Roll into 12 tablespoon size balls (about 5cm wide) and place each ball onto your tray. Avoid placing too close together as the mixture will flatten and spread as it bakes.

  7. Place in the oven and bake for 10-11 minutes or until golden brown, the longer you bake, the less gooey they will be.

  8. Once baked, remove from the oven and allow cookies to cool for 5 minutes, they should come out of the oven soft and will harden over those 5 minutes.
