Healthy Veg Packed Sausage Rolls
Here is a nourishing recipe your little (or big ones) will absolutely love. A healthier twist on the classic sausage roll, super packed with hidden veggies such as carrot and courgette as well as boosted with the Odi NutriDense Meal Booster–a powerhouse blend of 10 veggies, New Zealand beef liver and bone broth. Servings: 25 mini sausage rolls
Ingredients:
400g meat (I use Harmony Organic Beef Mince)
½ courgette, finely grated
½ carrot, finely grated¼ onion
1 tsp garlic (optional)
1 tbsp tomato paste
2 tsp Norish NutriDense Meal Booster
3 sheets ready roll puff pastry
2 eggs
Sesame seeds (optional)
Method:
Preheat oven to 180c and line a tray with baking paper
Add your courgette, carrot, onion, garlic, 1 egg and Odi NutriDense Meal Booster to a food processor and blitz until well combined (this makes the veggies un-noticeable but you could always mix in a bowl if you don’t have a food processor)
Add your meat and tomato paste and further blitz until combined
Spread mixture in a line along one side of your puff pastry and fold your pastry over. Seal the ends with a fork before cutting into mini sausage rolls
Brush over them with your beaten egg mixture (or milk) and sprinkle with sesame seeds
Bake for approx 20 minutes or until cooked through and golden in colour
