Preparation 20 mins
Servings 20

Ingredients:

  • 1 + 1/2 cup unsweetened desiccated

  • 1 cup soaked dates

  • 3/4 cup dried cranberries

  • 6 tsp maca powder

  • 2 servings of Nuzest vanilla protein powder

  • 1 cup fibre mix (oat bran/linseeds/psyllium husk)

  • 5 tbsp coconut oil, melted

  • 1 tbsp chia seeds

  • 2 tbsp honey, maple or rice malt syrup, melted

  • 1 tsp pure vanilla extract

  • A pinch of salt

Method:

  1. Add all ingredients to a food processor and pulse until all the ingredients are mixed together. Add more coconut oil or a little water if too dry until the mixture forms a dough consistency.

  2. Scoop out table spoons full, and use your hands to roll into bite size balls.

  3. Top with toppings of choice, I choose sugar free white chocolate and freeze dried raspberries.

  4. Place in the fridge to set.

- They will last in the fridge for up to one week otherwise store them in the freezer for longer periods of time!

The fibre mix I used was from the new Countdown Organic Whole-foods Range but you can make your own by grounding a combination of linseeds, psyllium husk and oat bran.
